Oreo Ice Cream Cake

You know how you have those friends that are really good friends, and they seemingly have always been you friends, but you don't know how you started being friends?  Its not like you went to school or church with them, and they aren't your neighbors... God just mysteriously plunked them into your life, and they have been there ever since?  Its like God just gave you a random kiss seemingly out of nowhere... those kinds of friends are wonderful.


Well, the Ramsays are those friends to our family.  I think my mom and Eileen have some kind of random story about how they met, involving visiting a church and maybe something about swimming lessons, but that doesn't explain why we are friends.  We just are, because God wanted us to be.

Anyway, we have Eileen Ramsay to thank for this recipe... and for letting Colleen hang out with the likes of me for as long as I can remember... right down to living on the same wing in college (you can't deny God's hand was in that).

OREO ICE CREAM CAKE

Mix together, saving 10 Oreos to top the cake:
16 oz. Oreos, crushed
2 Tbsp melted margarine
Press into the bottom of a 9 x 13 pan and refrigerate (or freeze) 30-60 minutes.
Spread on 1/2 gallon of softened vanilla ice cream.  Sprinkle on 3/4 (ish) cups peanuts.  Freeze until hard.

Chocolate Sauce
Boil for 8 minutes, stirring:
2 cups powdered sugar
12 oz evaporated milk
2/3 cups chocolate chips
1/2 cup butter
Remove from heat and add 1 tsp vanilla.  Spread over ice cream and freeze.  Top with 1 pint whipped cream or cool whip.  Top with remaining cookies and freeze again

NOTES:  I like to buy the ice cream in those folded cartons/ boxes, that you can pretty much take apart and have a brick of ice cream, then just slice it and put it in the pan and then spread it.  Also, allow the chocolate sauce to cool, but not too much.  You want it slightly warm so  that it gently (not quickly!) melts into the ice cream.  If it doesn't melt into the ice cream, you end up with a sticky, chewy, fudgey layer that is hard to eat.
