Creamy Chicken Sandwiches

This recipe is another so-good-yet-so-simple recipe, and it is an easy way to feed a crowd.  It is very flexible, and amounts are approximate.  We can thank my mom for this one (and my mother-in-law for the mac n' cheese).


CREAMY CHICKEN SANDWICHES
(I usually just call it "chicken goup")

Cook 1-2 lbs. boneless skinless chicken breasts and 1 can of cream of chicken soup long and slow  (8-10 hours) in a crock pot.  If there is lots of "juice" you can cock the lid and cook it off, or crunch up some potato chips or croutons and throw them in to thicken it. Stir a little bit to slightly shred the chicken (but don't over-shred).

Stir in 1/2 to 1 cup of sour cream just enough before serving to let it heat through.

Serve on buns...or not :)
