Fresh Peach Pie

This one is really good, really easy, and really versatile.  I got it from my mom.



FRESH PEACH PIE
1 3 oz. package of peach jello
1 cup sugar
3 T cornstarch
1 1/2 cup water
5-8 cups fresh sliced peaches
1 baked pie crust


In a saucepan, stir jello, sugar, and cornstarch; then add 1 1/2 cups of water, stirring to blend.  Cook on medium to low heat, stirring until mixture becomes clear, about 5-8 minutes.  Cool.  Combine with peaches to fill crust.  Refrigerate.  Serve with Cool Whip.


My friend Laura found a recipe like this that called for lemon jello instead of peach and blueberries in place of the peaches--it was really good.  I have also used strawberry jello and strawberries.  The possibilities are endless!
