Santa Fe Cheese Soup

I can't believe I haven't shared this recipe with y'all yet!  Its one of our favorites.  Easy and tasty.



Santa Fe Cheese Soup

  • 1 lb Velveeta cheese, cubed
  • 1 lb. hamburger, browned and drain
  • 1 can corn, with liquid
  • 1 can kidney beans, with liquid
  • 1 can (14.5 oz) diced tomatoes with green chilies, with liquid
  • 1 can (14.5 oz) stewed tomatoes, diced with liquid
  • 1 envelope taco seasoning

Combine all ingredients in greased 4 ½ to 6 quart crock pot. 
Cover and cook on high 3 hours or on low heat 4-6 hours.
Serve with tortilla chips (we like to eat it with Fritos), shredded cheese, and sour cream.
