Nine Bean Soup

Even though this recipe is called Nine Bean Soup, there are usually more than 9 types of beans in it.  I just buy bean soup mix.



This recipe is easy and healthy.  Just follow all the directions in the right order :)  As simple as it is, I have managed to screw it up twice.


NINE BEAN SOUP


2 c nine bean soup mix (or 12 bean, or whatever)
2 c water
1 lb ham diced
1 large onion, finely chopped
1 clove garlic, minced
1/2 - 3/4 tsp salt
1 16 oz can chopped tomatoes
10 oz can Rotel tomatoes


Sort and wash beans- soak overnight.  Drain.
Add 2 quarts water and next 4 ingredients.  Cover and bring to boil.
Reduce heat an simmer for 1 1/2 hours or until beans are done then add tomatoes and simmer 30 minutes more and stir occasionally.


NOTE: Do not add the tomatoes until the beans are done cooking.  DON'T think "Oh, after they cook for the 30 more minutes they should be done."  THIS IS A THINKING ERROR.  Something in the tomatoes stops the beans from cooking any more.  Weird, I know, but trust me on this one.  Been there, done that.
