Apple Week: Apple Crisp

This recipe is from a cookbook I have called More With Less.  The premise of the cookbook is that we should be good stewards of ALL the resources God has given us, and that we should take that into account when cooking.  The recipes are healthy, nutritious, and filling, as well as very tasty.  It is a great cookbook for people heading overseas because the recipes are flexible so you can use whatever grains and cereals are available.  It is also a great book for frugal cooks that appreciate making foods from scratch (I'm looking at YOU, Rachel).  A few times a year I resolve to use the concepts and recipes in the cookbook more.  I can't say I have made significant progress, but I have made small steps toward eating less processed foods and make a few more things from scratch.  And we eat more beans.  Check out the cookbook for WAY more info on balanced meals and nutrition.







APPLE CRISP


Preheat oven to 375 degrees.
Combine and put in greased casserole:

  • 3 c sliced or chopped apples
  • 1 T flour
  • 3/4 c sugar
  • 1 t cinnamon
  • 1/8 t salt
  • 1 T water

Cut together with a pastry blender:

  • 1/2 c rolled oats
  • 1/4 t salt
  • 2 T margarine
  • 1/4 c peanut butter
  • 1/3 c brown sugar

Sprinkle on top of casserole mixture.  Bake 35 minutes.

  2. Yum! Sam just asked me to make apple crisp today, but alas, no PB for him. I would love to get this cookbook. I've heard lots of good things about it and have made our own pancake syrup because of a post someone else did a few years back. Hoping for an apple sale...real soon!

  3. Actually, Rachel, this peanut butter version is a variation on the basic recipe in the cookbook. The original recipe simply says to use 1/4 c margarine. So you could go that route and it would be Sam-safe.
